3 Easy ways to cook Cod, or Scrod
Catching fish can be so fun, but having quick and easy ways to prepare them makes it even more fun and interesting. Cod, can sometimes also be called scrod. Scrod is a young cod or haddock fish that is split and boned. It is a staple in many New England and Atlantic Canada fish markets.
There are so many ways you can prepare fish, but I want to share just 3 of them here. One pound of cod, can equal 2 or 3 servings, depending on how big one's appetite is.
Oven Fried Cod
Preheat your oven to 450 degrees
Ingredients:
1/4 cup of melted butter or margarine
1 cup of your favorite crackers, crushed into cracker crumbs
Sea Salt and cracked pepper.
Lemon slices or wedges
Any mixture of the following herbs, can add a lot of flavor. Try Tarragon, Thyme, Oregano, Dill, Rosemary, and Marjoram
Directions:
Place your cod on a greased baking sheet or pan. Next, combine the butter or margarine and the cracker crumbs together. Sprinkle the crumbs over the fish. Season to your liking, with salt and pepper and the other herbs.
Bake at 450 degrees, for about eight to ten minutes or so. Serve with lemon wedges and garnish with some fresh herbs of your choice.
Pan Frying your Cod or Scrod
Ingredients:
Cod filets
1/2 cup of Italian seasoned bread crumbs. (If you don' t have any make your own with cracker crumbs, and by adding in italian spices like oregano and basil, and garlic, etc.)
1 tablespoon of margarine
lemon pepper
lemon wedges
Directions:
Coat your cod or scrod with the Italian bread crumbs first. Then, heat up your margarine in a skillet on medium heat. You want to cook the fish this way for about five to six minutes. Season with your lemon pepper. Turn the cod over, and cook on the other side for about four to five more minutes or so. Once fish is flaky, it is done.
Serve with lemon wedges, as the lemon juice adds a lot of flavor. Garnish with fresh herbs for an extra special touch.
Microwaving your Cod
With the microwave, you can have your fish so fast, that it will seem like no time has gone by. As easy as the other two methods are, this one is just amazingly fast. Here is what you do.
Ingredients:
Cod filets
1 - 14 ounce can of stewed tomatoes any style. I like Italian, but any kind will work.
Sea salt and cracked pepper
Any mixture of Oregano, Rosemary, Marjoram, Thyme, or Tarragon (optional herbs)
1/4 cup of Parmesan cheese
Rice, or pasta
Directions:
Place your fish in a microwavable dish. Top your fish with the stewed tomatoes. Season them with salt and pepper and any other seasonings you like. Add Parmesan cheese, and cover. Microwave on high for seven to eight minutes.
Serve over rise or Pasta. Garnish with lemon and or sprigs of your favorite herb.
To all my above recipes, I love to add a dash of cayenne pepper. It gives it a little kick, and a little bit won't overwhelm your meal. Just use a dash of it. Enjoy
