Sweet corn on the cob with a garlic butter crust

This is a really fun recipe to use to try something different and tasty with corn on the cob. People that don't usually eat corn on the cob may just love this, since it is so different and tasty. The sweet and the saltier and garlic combination makes it really fun.

This recipe serves about 6, but you may want to double and triple it for more or for those that want to almost make a meal out of it! Towards the end of the ingredient list, I add some more herbs that can go well with corn. Have fun trying out new herbs, and appreciate their healing qualities along with their taste.

This recipe calls for the corn to be grilled, but could also be broiled, though may not turn out as evenly crispy, etc. Don't let the "grilled" part of it keep you from trying it.

Sweet Corn on the cob with garlic butter crust

Ingredients:

Six or more corn on the cob

One cup of butter (or your favorite substitute)

Two tablespoons of olive oil

Two garlic cloves, peeled and crushed or put through a garlic press

One tablespoon of chopped parsley

Two teaspoons of freshly ground black pepper, and a dash of cayenne pepper

One cup of breadcrumbs, whole meal. Italian flavored bread crumbs are good too

**Some other herbs to add to this recipe, that will go well with corn on the cob: Sage, Thyme, Chervil or Chives, Saffron, Lemon Balm**

Directions

Directions:

First, prepare all your ingredients, make sure the corn husks are off, etc. Chop and have any herbs ready to go. Fire up your grill or broiler, and start some water boiling in a large pot.

Boil your cobs of corn in salty water, until they are tender, and leave them to cool down some.

Next, melt your butter, and add the oil and garlic pepper, and other herbs besides parsley to this. Pour this mixture into a shallow dish.

Next, mix your breadcrumbs and parsley in another shallow dish. I add a pinch of sea or kosher salt to this mixture too, and more pepper.

Roll your corn in the butter to coat it, or brush with a pastry brush if that is easier.

Roll the buttered corn in the bread crumb mixture.

With grill set to high, grill your corn until the bread crumbs are golden.  These are crumbly, but oh so good!

This sounds absolutely awesome! My friend showed me how to cook corn on the cob in the microwave. You just throw the ears in the nuker shucks and all. Cove with a wet paper towel and microwave for 6 minutes. No need to boil the ears! Easier than baking potatoes in the microwave.

I've never grilled corn and I have a question. Do the ears go directly on the grill or wrapped in foil with the breadcrumbs?

Wife,if grilling corn with breadcrumbs, that you use foil to keep the ingredients in tact. Many like to grill corn without the foil, however.

Me too, I love the sweetness of the corn, and saltiness of the butter and salt! You can't beat fresh corn on the cob.
