Cooking Rockfish, 3 super easy ideas

There are many kinds of rockfish. If you should be lucky enough to catch some rockfish, here are 3 super easy ways to cook them up. One pound of rockfish can make about 2 or 3 servings.  Nothing gets easier than the microwave, so lets start there.

Microwaving Rockfish Recipe

Ingredients: Rockfish filets

1 tablespoon of oil or butter

Salt and Pepper

1 cup of your favorite salsa

shredded cheese, colby is good for this

sour cream, guacamole and heated tortillas

Directions:

Place your rockfish filet or filets in a microwavable dish. Drizzle the fish with melted butter, and add sea salt and cracked pepper to taste. Top with one cup of salsa, and microwave on high for 7-8 minutes or until your fish flakes.

Serve with your warm tortillas and cheese, sour cream and guacamole if you like. Makes a great meal.

Pan Frying your rockfish

Ingredients:

1/4 cup of bread crumbs

garlic salt

salt and pepper

1 tablespoon of oil

lemon wedges

tartar sauce

** If you like to spice up your fish with more herbs, try any combination of these herbs:  Tarragon, dill, rosemary, thyme, marjoram, and oregano.

Directions:

Coat your fish with 1/4 cup of bread crumbs, then season with garlic salt and pepper.

Heat one tablespoon of oil in a skillet over medium heat. Cook the fish for about 5 minutes or so. Turn fish over and cook another 5-6 minutes or until the fish flakes.

Serve up with lemon wedges and tartar sauce if desired.

Baking your rockfish

Ingredients:

Salt and Pepper

1 tablespoon oil

2 tablespoons minced onions

Other herbs, like tarragon, dill, oregano, rosemary, marjoram, and thyme are good. I also add cayenne in mine, just a dash though.

1 can (10 and 3/4 ounces) of tomato soup

cooked rice or pasta

Directions: Put your fish in a greased baking dish. You don't want it to stick during cooking. Sprinkle it with sea salt and cracked pepper, oil, and minced onions. Top with the tomato soup.

Bake at 425 degrees for about 15 - 20 minutes. Serve your rockfish over the rice or pasta. What a healthy meal!
